A juicy ostrich patty infused with secret African spices has earned Newport’s Sindy-Ann Smith a chance to compete in the World Food Championships.
The event will be held from June 30- July 2 at the Melbourne Convention & Exhibition Centre, where Ms Smith will compete in the category for burgers.
Ms Smith’s passion for cooking stemmed from her father’s passion.
“My father built a whole lot of restaurants inspired by cultures we saw when we travelled,” she said.
“Growing up I was always in the kitchen, I felt so creative and inspired to create these new dishes.”
Her love for cooking led to her competing on My Kitchen Rules a few years back.
“When this opportunity came up I thought it would be cool to do something like that again,” she said.
Ms Smith will compete in two rounds, eventually competing with the top five where a winner with best burger will be crowned.
When it came time to choose a category, she said burgers were an easy choice.
“I love cooking burgers , family and friends always ask me to cook burgers for them,” she said.
“I have gone with something totally unique, no one else would even dare to make it but it is absolutely incredible.
“The burger is mainly west African inspired, particularly Namibian with having the ostrich inspired mince, I want to take the fear out of an incredibly lean meat.”
For her second round she will be making an aged steak burger, pan fried in a smoked butter, topped with a cured egg, marinated rocket on a brioche bun.
Those who would like to try Ms Smith’s one of a kind burger, they will only have to travel to Docklands to Vuvu Telo to her new cafe opening on July 30.
