MUG’S GAME
Whether it be a single giant choc-chip cookie or a microwaved mug cake, dessert recipes designed for one person are always well received when I share them in this column. Maybe it’s because sometimes – late at night in front of the tv – we just want a sweet treat to savour without polishing off an entire package.

ONE MINUTE COCONUT MUG CAKE
One third of a cup self-raising flour
2 tablespoons desiccated coconut
1 tablespoon raw sugar
¼ cup coconut milk
1 tablespoon light olive oil
1 egg
2 tablespoons lemon curd
Place flour, coconut and sugar into a 375ml mug and mix well. Add the coconut milk, olive oil and egg. Mix well with a spoon until combined. Gently stir through lemon curd. Don’t mix it in completely. Microwave on high for 50 to 60 seconds or until it puffs and rises to the top, watching to make sure it doesn’t spill over. Serve immediately with extra lemon curd and cream.
