I’m sure I don’t need to point out to anyone that it’s an uphill battle keeping the kilos at bay once you pass 40. And while I’ve never been one to compromise on my favourite treats, I do try to keep my sweet tooth in control during the week, so that I can indulge at the weekends.
Which is why I came up with my own recipe for a delicious yet much healthier version of truffles (or rum balls – or whatever you like to call those chocolate balls rolled in coconut!) They taste decadent and chocolatey but, because they’re made with maple syrup instead of regular sugar, they’re not sickly sweet. I keep them in an airtight container in the freezer and grab a couple whenever I feel like treating myself.
Simply combine the following in a large bowl: 150g packet of almond meal, 1 teaspoon ground cinnamon, 1/3 cup of unsweetened cocoa, 2 handfuls of shredded coconut, 1/3 cup of almond and cashew spread, 1 heaped tablespoon melted coconut oil, 3 heaped tablespoons maple syrup. Roll into balls (adding a splash of low fat milk if needed, to help with the consistency). Roll the balls in extra shredded coconut. Enjoy guilt free!
